Butternut Squash Soup for Radiant Fall & Winter Skin

Ingredients
1 butternut squash
3–4 carrots, peeled and chopped
3 stalks celery, chopped
¾ leek, chopped
1–2 bay leaves
1 tsp cumin seeds
¾ tsp turmeric
5 whole cloves
3 Tbsp ghee, butter, coconut oil, or olive oil
4 cups water
Directions
Roast the Squash
Preheat oven to 400°F.
Pierce the squash several times with a fork and roast 35–60 minutes, until tender.
Cool slightly, cut in half lengthwise, scoop out the seeds, and cube the flesh.Sauté the Spices and Vegetables
In a large pot, warm your choice of ghee, butter, coconut oil, or olive oil.
Add cumin seeds, cloves, and bay leaves; stir until fragrant and the cumin begins to pop.
Add leek, carrots, and celery. Cover lightly to let the vegetables soften in their own steam.Simmer and Combine
Pour in the water and bring to a gentle boil.
Add roasted squash and simmer 20–40 minutes, until everything is tender and aromatic.
Remove bay leaves and let cool slightly.Blend and Serve
Blend until smooth using an immersion blender or in batches.
Reheat gently before serving, no need to boil again.
To Serve
Top with a drizzle of olive or coconut oil, a sprinkle of toasted seeds, or a swirl of cream.
